Paula was awesome. Matt told her he was a big fan of her bacon wrapped, deep fried macaroni and cheese recipe. Her response? “I wouldn’t incorporate that into your daily diet if I was you!”

Chef Flay was awesome too. You could tell people bug him all day long but he didn’t really mind. He asked us how business was going. The answer? Obviously not as good as his, lol. He talked to us about the arancini, wished us good luck and then went back to getting primped by his staff. Someone warned us he was mean, but we didn’t get that vibe at all.

Vesuvio has been on the road for two weeks now, and the reviews have been awesome! But you don’t have to take our word for it…

In speaking of our signature arancini, Jessicay Roy writes, "E mi crede, erano deliziosi (and believe me, they were delicious)!"

Vesuvio is finally home, safe and sound, after a quick tour of Italy followed by her maiden voyage to Hawthorne, California.

Her vinyl wrap has been applied, the rims have been polished, and she’s good to go!

Over the next few days we will be cooking some food on the truck and serving it to family and friends. Once we get the seal of approval from our taste-testers, she will be hitting the streets.

Vesuvio made a pit stop in Napoli, where this photo was taken. Here you can see her proudly parked in front of Mt. Vesuvius, her namesake.

First things first, Vinny won an epic battle against the Los Angeles County Department of Health. We have all of our documentation in order, which is huge!

Second, Vesuvification commenced Wednesday and ended today. That’s right… our vinyl wrap is on and we’re gonna be cruising around town pretty soon. I can’t wait to go pick up the truck tomorrow and take it for a joy ride. What girl can’t resist 8,000 pounds of stainless steel, right?

I requested that the vinyl completely cover the emergency exit window so the black frame didn't show through. Fingers crossed for no grease fires!
